PhD biochemistry-turned-food scientist, with nearly a decade of experience in fungi, microorganisms, and protein chemistry. Before co-founding Allium Bio, he led several research teams at A*STAR, Singapore’s leading research organisation, exploring sustainable food applications for fermentation of fungi and other microorganisms. It was his deep expertise in fungi fermentation and a passion for sustainable food production that sparked the initial idea for a novel co-cultured fermentation approach to plant-based protein production.
