Tan Ding Jie

DJ began his research career working in organic synthesis, then moved to create flavours and fragrances from biotransformation. Before Prefer, he founded a boutique food consultancy, Starter Culture, which collaborated with Michelin-starred restaurants and World’s Best bars to develop novel, fermentation-derived ingredients and techniques. He used his platform to conduct community workshops, educating people on fermentation and food science. In recognition of his impact on the local food scene, he became known as Singapore’s Prince of Fermentation.
